Here's a list of special equipment that will bring your pizza making to the next level.

Pizza Peel
|
The thin paddle (usually wooden) used to remove your pizza from the oven. You can get a peel with a short or long handle - it's your preference. A shorter handle means you hands will be getting closer to the "heat". The peel helps to place and remove a pizza onto a pizza stone. |

Pizza Stone
|
An unglazed tile, usually of terra cotta or some other porous material, that helps give a pizza a crisp, consistent crust. To use, place the stone on the lowest rack of your oven and then preheat to your target temperature.
You can buy a pizza stone in a variety of sizes and shapes. Some include a rack with handles that allow you to remove the stone from the oven (with heat protection of course !). Pizza stones should be carefully cleaned - NO SOAPS !! |

Pizza Screen
|
Usually made of aluminum, the pizza screen gives you some of the benefits of the pizza stone without the drawbacks - primarily easy clean up and no lengthy pre heating. These screens allows you to make crispy crusts. |

Deep Dish Pans
|
Like that Chicago Style pizza? Then you need a deep dish pizza pan. These pans are usually aluminum, with a dark gray / black surface that helps with even cooking. The pans are usually 1.5 to 2 inches deep and come in a variety of sizes |

Docker
|
A docker is used right before you "top" your pizza. The docker is rolled over your pizza dough and perforates the dough to allow steam to escape. This prevents those annoying "dough bubbles" in your pizza. |
